Abstract

The paper addresses diversity, multi‐culturalism and mental health. It reports qualitative data from a larger project on multi‐cultural counselling competencies in Portugal which sought to meet the needs identified by specific minority groups by developing integrative, responsive and culturally sensitive treatments. A qualitative study is presented, with the aim of exploring the representations of mental health and illness held by ethnic minority groups in Portugal, as well as their specific needs and obstacles encountered in their interactions with health professionals. Semi‐structured interviews were conducted, and the results indicate that the meanings of health and mental health varied. Meanings of psychological health were related to general well‐being. Help‐seeking behaviours were associated with providing and receiving family and social support, mainly among participants of African descent. Although the great majority of participants had had no experience of counselling or psychotherapy, they expected psychologists to be multiculturally sensitive, as well as knowledgeable about diversity and multi‐culturalism. Implications for development of mental health services for minority clients are discussed.

Abstract

We present a critical literature review debating Brazilian research on social and environmental accounting (SEA). The aim of this study is to understand the role of politics in the construction of hegemonies in SEA research in Brazil. In particular, we examine the role of hegemony in relation to the co-option of SEA literature and sustainability in the Brazilian context by the logic of development for economic growth in emerging economies. The methodological approach adopts a post-structural perspective that reflects Laclau and Mouffe’s discourse theory. The study employs a hermeneutical, rhetorical approach to understand and classify 352 Brazilian research articles on SEA. We employ Brown and Fraser’s (2006) categorizations of SEA literature to help in our analysis: the business case, the stakeholder–accountability approach, and the critical case. We argue that the business case is prominent in Brazilian studies. Second-stage analysis suggests that the major themes under discussion include measurement, consulting, and descriptive approach. We argue that these themes illustrate the degree of influence of the hegemonic politics relevant to emerging economics, as these themes predominantly concern economic growth and a capitalist context. This paper discusses trends and practices in the Brazilian literature on SEA and argues that the focus means that SEA avoids critical debates of the role of capitalist logics in an emerging economy concerning sustainability. We urge the Brazilian academy to understand the implications of its reifying agenda and engage, counter-hegemonically, in a social and political agenda beyond the hegemonic support of a particular set of capitalist interests.

Abstract

Purpose

The purpose of this study is to analyse the effect of health risk perceptions on the degree of decisiveness of a person towards e-commerce (e-commerce acceptance), self-awareness towards leisure and self-awareness towards socialisation in pandemic contexts. The identified gap was related to the COVID-19 pandemic, where the development of studies inherent to this context is becoming urgent. Thus, it was necessary to understand how the health risks perceived by individuals influenced their choice regarding online shopping and, simultaneously, socialising and leisure activities.

Design/methodology/approach

To reach this goal, a conceptual model was developed based on the self-determination theory, and data were collected from two countries (Portugal and Croatia). The model was estimated using the structural equation modelling (SEM).

Findings

The results showed that the perceptions regarding health risks have a positive effect on the degree of decisiveness of a person towards e-commerce acceptance and self-awareness towards socialisation. In turn, the perceptions of health risks have a positive effect on self-awareness towards leisure, not supporting the model conceptualisation.

Originality/value

The paper contributes to fill a gap in literature by analysing the simultaneous effect of individuals’ e-commerce motivations for leisure and socialising activities within a pandemic context. These results have significant managerial implications for several stakeholders that must communicate to the specific public regarding this type of events.

Propósito

El propósito de este estudio es analizar el efecto de las percepciones de riesgo para la salud sobre i) el grado de decisión de una persona hacia el comercio electrónico (aceptación del comercio electrónico); ii) la autoconciencia hacia el ocio; y iii) la autoconciencia hacia la socialización en contextos de pandemia. La laguna identificada estaba relacionada con la pandemia de COVID-19, donde era urgente desarrollar estudios inherentes a este contexto. Así, era necesario comprender cómo los riesgos para la salud percibidos por los individuos influían en su elección respecto a las compras en línea y, simultáneamente, a las actividades de socialización y ocio.

Diseño/metodología/enfoque

Para alcanzar este objetivo, se desarrolló un modelo conceptual, basado en la teoría de la autodeterminación y se recogieron datos de dos países (Portugal y Croacia). El modelo se estimó mediante un modelo de ecuaciones estructurales (SEM).

Resultados

Los resultados mostraron que las percepciones sobre los riesgos para la salud tienen un efecto positivo en el grado de decisión de una persona hacia la aceptación del comercio electrónico y la autoconciencia hacia la socialización. A su vez, las percepciones sobre los riesgos para la salud tienen efectos positivos sobre la autoconciencia hacia el ocio no suportando la conceptualización del modelo.

Originalidad

El artículo contribuye a llenar un vacío en la literatura al analizar el efecto simultáneo de las motivaciones de comercio electrónico de los individuos para actividades de ocio y socialización en un contexto de pandemia. Estos resultados tienen importantes implicaciones de gestión para varios actores que deben comunicar al público específico sobre el tipo de eventos.

Objetivo

O objetivo deste estudo é analisar o efeito da perceção dos riscos para a saúde sobre i) o grau de decisão de uma pessoa em relação ao comércio eletrónico (aceitação do comércio eletrónico); ii) a auto-consciencialização em relação ao lazer; e iii) a auto-consciencialização em relação à socialização em contextos pandémicos. A lacuna identificada estava relacionada com a pandemia da COVID-19, onde era urgente desenvolver estudos inerentes a este contexto. Assim, foi necessário compreender como os riscos de saúde percebidos pelos indivíduos influenciaram a sua escolha relativamente às compras on-line e, simultaneamente, às atividades de socialização e lazer.

Conceção/metodologia/abordagem

Para atingir este objetivo, foi desenvolvido um modelo concetual, com base na teoria da autodeterminação e foram recolhidos dados de dois países (Portugal e Croácia). O modelo foi estimado utilizando a modelação de equações estruturais (SEM).

Conclusões

Os resultados mostraram que as perceções relativas aos riscos de saúde têm um efeito positivo sobre o grau de decisão de uma pessoa em relação à aceitação do comércio eletrónico e de auto-consciencialização em relação à socialização. Por sua vez, as perceções dos riscos de saúde têm efeitos positivos sobre a auto-consciencialização em relação ao lazer não suportando o modelo concetual.

Originalidade

O artigo contribui para preencher uma lacuna na literatura ao analisar o efeito simultâneo das motivações do comércio eletrónico dos indivíduos para atividades de lazer e socialização em um contexto de pandemia. Estes resultados têm implicações de gestão significativas para vários intervenientes que devem comunicar ao público específico sobre o tipo de eventos.

Abstract

Purpose

This study aimed to evaluate the antimicrobial activity of the aqueous extract from jaboticaba skin against important foodborne bacteria and fungi and its stability.

Design/methodology/approach

Jaboticaba skin aqueous extract (at ratio of 10 g L-1) was tested against Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus and Escherichia coli. Stability of the anti-staphylococcal activity, total phenolics, monomeric anthocyanins, tannins, phenolic acid content were measured and statistically correlated.

Findings

The residue extract inhibited L.monocytogenes, S.aureus, B.cereus and E.coli growth but was not effective against fungi and was stable to the thermal treatments, remaining with its inhibitory activity against S.aureus. When stored for 14 days at 25 °C with an incidence of light, there was a reduction in the antibacterial activity and in the phenolic compounds. The change in pH slightly changed polyphenolic content profile, and the exposure to papain and bromelain did not affect the antimicrobial activity. Results showed strong correlation between anti-staphylococcal activity, the presence of polyphenols and anthocyanins, meanwhile moderate correlation with phenolic acids content in the extract.

Originality/value

Biopreservatives are a great trend in food microbiology. The present work shows deeper information about the utilization of jaboticaba skin as antimicrobial agent and its stability, which is not found in the current literature.

Abstract

Purpose

The native species from western Mato Grosso do Sul provide fruits with unique sensory characteristics and high nutrient concentrations. Tropical fruit consumption is increasing due to the growing recognition of the nutritional value. These fruits play important roles through the marketing of their products and nutritionally through their consumption. All fruits are edible and are used in the food industry and well sensory accepted. The purpose of this paper is to verify the physicochemical characteristics, bioactive compounds and antioxidant activity in fruits collected in the Cerrado and Pantanal biomes from western Mato Grosso do Sul.

Design/methodology/approach

The fruits of baru, bocaiuva, jatobá, jenipapo and pequi were collected. To characterize them, longitudinal diameter, transverse diameter, total soluble solids, acidity, pH, ascorbic acid, total phenolics, antioxidant capacity, total sugar, glucose and macro and micronutrient contents analysis were performed in triplicate.

Findings

Jatobá presented the highest values of vitamin C. For phenolics, baru and jatobá stood out; bocaiuva presented the highest results for sugars, while jatobá was superior for glucose. The fruits with the highest antioxidant capacity, DPPH, were pequi and baru, while via ABTS the jatobá was the highest. Baru presented higher levels of nitrogen, phosphorus, magnesium, copper, zinc and iron. The bocaiuva presented the highest results for potassium and sulfur, the jatobá calcium and manganese. Jenipapo stood out with its boron content. Magnesium presented superior results in the baru, jenipapo and bocaiuva. The results reinforce the diversity of physicochemical characteristics.

Originality/value

The increase of the flow of available information, together with the growth of multicultural influences, the search for wholesome diet and the diversity of flavors and colors make these fruits important regional development tools. Their characteristics encompass national and international exploration potential that arouse consumer interest and contribute to the pursuit of innovations. In addition, the native species mentioned above provide fruits with unique sensory characteristics. Their consumption is increasing in the markets due to the growing recognition of their nutritional value. Therefore, these fruits play important roles, economically, through the marketing of their products and nutritionally through their consumption.

Abstract

Purpose

The purpose of this study is to evaluate the yield, physico-chemical and microbiological parameters during the shelf life of the Minas Frescal cheese hand-manufactured by family farms.

Design/methodology/approach

In the milk, analyses of total bacterial counts, somatic cell counts and centesimal composition were performed. The milk coagulation was analyzed, with different curd times (40, 80 and 120 min), with respect to the proximate composition, pH, titratable acidity, yield and microbiological counts. The means were compared using the Tukey test with a significance level of 5 per cent. The most probable number of microorganisms were also determined in water.

Findings

The results for milk quality were within the requirements established in Normative Instruction 62, except for total dry extract. It was found that curd time did not influence the protein and fat in dry matter contents; however, the ash content in cheese of 40 min of curd time (2.8 g/100g) is significantly higher (p = 0.02) than the values found for the other curd times. The same behavior was observed for moisture content (p = 0.04). The parameters determining the cheese quality were outside the standards for human consumption, but this result is directly related to the water conditions, which were outside of potability levels. To meet the requirements established in the legislation, dairy products must follow strict standards of quality hygiene, both the raw material (water, milk) and their employees who act directly in the process.

Originality/value

For the preparation of the Minas Frescal cheese, it takes several steps, from obtaining the milk to the product ready to be consumed, so the importance of doing this monitoring and evaluating its quality.
